It wouldn't be Easter at my place without some delicious homemade gingerbread. YUM!
After giving up grains last year I had to alter our family favourite recipe so that we could continue to enjoy these yummy treats. So I bequeath to you my own original, grain-free gingerbread recipe for you and your family to enjoy.

GRAIN-FREE GINGERBREAD by Jen
(Makes about 25 delicious biscuits)
You will need:
250g Butter (softened)
1 cup firmly packed brown sugar
1/2 cup Golden Syrup
1/2 cup Molasses
2 egg yolks
2 TBS Ginger
2 Tsp Mixed Spice
1 Tsp Bi-carb Soda
2 cups Flaxmeal
1 cup Coconut Flour
1 cup Arrowroot
- Preheat oven to 150C.
- Mix together butter and sugar.
- Add golden syrup & molasses.
- Add egg yolks & spices.
- Add all other ingredients.
- Spoon onto trays (covered with baking paper), I make mine about a tablespoon size.
- Bake for 15mins, until just darkening around the edges.
