Along this journey of learning that I am undertaking I have time and time again used myself as the “test subject”. This not only saves anyone one else (namely my husband and children) from having try my latest herbal concoction or super-DOOPER green smoothie, but it has the added benefit of giving me a greater understanding of my own body and health. Through this I have become acutely aware of the things my body needs to be in its best health, and from that I hope to help many others in the future.

For me the convincing argument was for my Immune system and, in turn, my poor old Liver. After all if the immune system is strong and fully charged then it can deal with any bacteria, pathogens or internal dramas effectively. That is all the reason I needed.
So as I adapt some of my much loved recipes for the family to reduce or cut out the sugar I have happened upon a few real gems that simply had to be shared. A healthy diet does not have to mean living off celery sticks you know :-
Here’s the first one: my low fructose, vegan, dairy free, no bake sweet slice. Talk about ticking all the boxes!! I hope you’ll enjoy this slice as much as I do and share with all your friends.

(Please use quality organic ingredients wherever possible)
You will need:
250g Raw Cashews
250g Raw Macadamias
1cup Shredded Coconut
1/2cup Maple Syrup (or 1tsp Stevia)
1cup Goji Berries
2tsp Vanilla
150g Cocoa Butter

(Please use quality organic ingredients wherever possible)
You will need:
250g Raw Cashews
250g Raw Macadamias
1cup Shredded Coconut
1/2cup Maple Syrup (or 1tsp Stevia)
1cup Goji Berries
2tsp Vanilla
150g Cocoa Butter
- Melt Butter.
- Add maple syrup and vanilla to the liquid, then add the Goji and allow to soak for a few minutes.
- Put nuts and coconut into food processor or thermomix and blitz until smooth.
- Combine liquid and Goji with the nuts and mix to combine.
- Press into a lined slice tray.
- Refrigerate for 4hours min.
- Slice generously and enjoy.
